Happy Friday everybody. Before we head out for the US Soccer game (so excited!), I wanted to share an easy and twisted take on the traditional eggs benedict recipe that we all know and love. Enjoy!
Inspiration for this recipe:
- Leftover mashed potatoes
- Leftover cheese queso dip
- a love for Eggs Benedict
BINGO!
The traditional version of eggs benedict consists of two halves of an English muffin topped with ham or Canadian bacon, a poached egg and Hollandaise sauce.
Growing up, my mom fixed this quite often for a weekend breakfast, but would substitute cheese whiz for the Hollandaise (smart lady, which gave me an idea.
Using my leftover and what I had on hand, my faux benedict consists of potato pancakes with ham mixed in (using leftover mashed potatoes) instead of English muffins and Canadian bacon, a fried dippy egg (over medium) in place of the poached egg and leftover cheese queso dip instead of Hollandaise.
The verdict? Delicious!
Potato Pancakes
- 2 c. leftover mashed potatoes
- 1/4 c. flour
- 1/4 c. milk
- 1 egg, beaten
- 1 tbsp. onion, minced
- 1/4 C shredded cheese
- 1/4 C diced ham (I used sandwich meat I had on hand)
- Garlic Salt, Seasoning Salt or Salt and Pepper
Combine mashed potatoes, flour, milk, egg, onions and ham and cheese. Seasoning as desired. Form into 3 inch round patties and fry on top of a medium-hot griddle using nonstick spray. Brown on both sides.
To assemble simply top a potato pancake with a fried egg and top with queso.
