Instant Pot Popcorn


I scream, you scream, we all scream for...POPCORN!

We love popcorn at our house, and when homemade, can be a very healthy snack.  If you are of the stove top method and it works for you, keep going.

With two little ones who are always ready for a snack, this quicker Instant Pot version of our favorite stove top popcorn saves us a few precious minutes and tastes delicious.



Here's how:

With the Instant Pot set on the saute setting, melt 2 tablespoons of coconut oil.  Drop in 3 heaping tablespoons of popcorn kernels, turn the saute button up to "more" or the highest saute setting on the IP and cover with a glass lid.


Wait a few minutes and then...boom.  Watch the magic happen - literally, my kids love to watch the popcorn actually pop!  You can lift the metal insert out with the lid still on (using oven mitts, it gets hot!) and shake a little bit, but that is just optional.



Once the popping slows to about 15 seconds between pops, turn the IP off and let it all just hang out in there for a few more minutes.  Season however you like, we just usually add a little bit of salt, and then enjoy!
