(Long) Weekend Update

It was a quick long weekend, but just what the doctor ordered.  Read on to see what we were up to with some of our favorite people!

Any excuse to head to the mountains and we are in.  When our friends invited us to come hang with them during their winter break in Blowing Rock/Boone for a day or two we took them up on it.  After basketball on Saturday we packed the car, dropped off the dog and headed north.

We arrived in Blowing Rock on Saturday afternoon, got some coffee, found some murals and then headed to the gorgeous rental house to meet our friends and get the weekend started.  The house was huge and had the most beautiful setting.  Mountain views, sloping land, running stream, rocks to climb on, pull out beds everywhere, hot tub, pool table and a basketball hoop.  We were all in heaven - the bigs and the littles!

There were 14 of us in all, which sounds like a lot, but unless we were trying to get a table at a restaurant, didn't feel like a huge group.

Saturday night we ate in, caught up, drank adult bevs, watched the kids (and dads) in the hot tub and had a blast.

Sunday morning was an early-ish wake up call.  We feasted on some yummy make ahead breakfast casseroles (recipes coming soon) and then loaded up to make our way to Hawksnest Tubing and Ziplining in Seven Devils, NC.

The key here is to reserve your spots well in advance!  The tubing slots are available in two hour stretches and you must have tickets before arriving.

Luckily my friend had made reservations about 2 weeks prior to our visit.  They sell out quickly and my tip - book the first run of the day!  We started at 10 am and had the quickest, cleanest snow around.  We also had plenty of parking.  Win, win!

There are 4 different runs, all of which vary in speed.  We tried all of them, but loved the fastest one the most.  Once at the bottom there is a magic carpet lift to take you back to the top (whew!).  Small kiddos can ride on laps and you can also link tubes together to ride two or three at a time.

We tubed for the whole two hours without stopping and had a blast.  We took advantage of the pretty views afterwards for some pictures and hot chocolate sipping.

We headed to lunch in Boone with the hopes of eating at some of the more well known eateries there, but everywhere was packed and with a group of 14 we ended up at the Boone Saloon for some drinks and brunch.

The rest of the afternoon was spent climbing rocks, playing basketball and lounging in the hot tub before we had to head home (Mike had to work yesterday, the rest of us didn't have school).

As sad as I was to leave a day early, it was nice to have the whole day yesterday to do the unpacking and laundry that always comes with trips.

I'm already counting down the days until we can do this again!  Big smiles and happy hearts all the way around.

As far as having full bellies this week - here's what we have planned:

M:  Chicken Kebabs and Confetti (Brown) Rice
T:  Broccoli and Cheese Baked Potatoes
W:  Salisbury Steak Meatballs w/ Air Fryer Brussels Sprouts
Th:  Chicken Taco Chili
F:  Homemade Pizza
Sa:  Chicken Marsala w/ Corn on the Cob and Green Beans
Su: Chopped Salad

Have a great week!
