Menu Monday…err Tuesday


Happy New Year everybody!  I honestly can’t believe it’s already 2015 and Everett will be turning 2 in less than a month.  Holy moly.  We had a spectacular time last week chilling out, watching the Badgers win at the Outback Bowl and getting some quality family time in before I headed back to work yesterday (can you say t-i-r-e-d today!?!?).

As I said above, on New Year’s Day we headed to Tampa to watch Mike’s beloved Wisconsin Badgers play the Auburn Tigers.  We met up with our friends Jenny and Jeremy as Jenny is an Auburn alum and couldn’t wait to cheer on her team either. 
I have to tell you, Mike and Jenny are hilarious together on a normal day, but just magnify that and put a rivalry game in the mix and they had my laughing the entire time.  Jeremy actually was sick with the flu and didn’t make the game, so the three of us were on our own.

We tailgated with cinnamon rolls, bacon on the grill, turkey kielbasa, fresh fruit and breakfast burritos (pre-made and heated on the grill), and of course Mimosas and Bloody Marys to drink.  So good.  All of it.

Luckily Wisco was victorious in overtime.  It was a nail-biter and I had a happy, happy hubby at the end!  We also got to hang out with Mike’s cousin Cody and his fiance Sherrie before and after the game.  They were in town from Michigan and it was so great to catch up.

The rest of the weekend was spent watching more football (yay for the Gator win!!!), recuperating and exploring.  We ventured out to Lake Lotus Park in Altamonte on Sunday and had a fabulous time walking on the boardwalk, watching snakes in the water and playing on the playground.  The park is so tranquil and gorgeous.  I can’t believe we haven’t been there before!

This week is all about getting back in the groove and surviving until the weekend.  Here’s our eating plan…I hope yours is just as yummy!

W:  Meatloaf w/ Veggie Wild Rice and Roasted Carrots

F:  Chicken and Wild Rice Soup
Sa: Shrimp Pasta
Su:  Chicken Tetrazzini w/ Green Beans
