Menu Tuesday

Howdy!  I hope everyone is having a great week so far.  We are rained in at the moment (I guess better than snow) and “cold” winter weather is headed our way…thankfully only for the next three days.  Then we are back in the 70s for the weekend…yippeee!
Below are our weekend funsies over the past two weekends followed by a delicious menu at the end – enjoy!

Two weekends ago I don’t even remember what we did on that Saturday, but I do know we had a Sunday Funday that was packed full!  We started out at KeKe’s Breakfast CafĂ© for some good eats with our friends.  6 adults and 4 kids (two 2 year olds, a 1 year old and 3 month old).  We made it happen, although the busboy probably wasn’t loving us when we left – it was a bit of a mess as you can imagine.  But the food was delish and the company, of course, was unbeatable.

E was excited because he got to hang with his lady, Kennedy and she even took him for a “drive” after breakfast.  These two.  So cute.

After breakfast we headed straight to Cocoa Beach to meet up with our friends Lynn and Tuller for our first beach trip of the season!  The water was cold, but the weather was GORGEOUS!  It was sunny, not a cloud in the sky and about 65 degrees.  Literally perfect.

My favorite shot of the day – E hugging “Yay” (Jay).

This past weekend we spent again…with friends.  We are so lucky to have a great core group of friends that are like our family.  It’s so awesome to get to raise our kiddos together while hashing out this whole “marriage/parenting/life” thing side by side. It’s truly amazing.  And they're all funny.  So funny.
Anyway, we started Valentine’s Day out by making cookie cake!  My sous chef just wanted to eat the chocolate chips, surprise surprise, but we got some other ingredients in there as well.

After that we headed to Brook Hollow Farm to pick more strawberries (our first visit this year was to Oak Haven Farms in Sorrento, FL).  Brook Hollow is a hydroponic u-pick farm (see picture from their website below) in which the strawberries are grown above ground – which for me means no bending over to the ground to pick…score!

We met our friends Jenny, Jeremy and their son Carson and each got a basket full.  We did have to search a bit, the ripe fruit was getting a bit picked out, but they said by Thursday of this week they would have tons more that would be ready.  Remember, when you go to any u-pick, be sure to call first!

We finished Valentine’s Day with a cookout at Lynn and Tuller’s where we feasted on salad, chicken, ribs, baked beans…and cookie cake of course!  It was definitely a day filled with love!

As for this week, we are back to the grind, trying to stay dry and warm and looking forward to another weekend of funsies.  Mike has his annual Wetlands Festival that he always helps put on and E and I (after checking out the festival) are headed to Carson’s 1st Birthday Party…eeek!  How is he 1 already???

Here’s what’s in the oven---

M:  Crispy Chicken Chopped Salad

W:  Salmon on the Grill
Th:  Brinner – Veggie Omelets w/ Hash Browns
F:  Caramelized Onion and Mushroom Quesadillas w/ Black Beans and Yellow Rice (Meatless)
