Menu Tuesday

 

Howdy y’all!  Here’s our weekend recap…

 

Saturday:

We started our Saturday off with a family run (our next 15K is coming up quickly) and then headed to Wekiva Springs for the morning.  We found a nice shady spot and had a great time just hanging out.  We also had a great visit with our friends Jill, Ryan and their daughter Kennedy (E’s girlfriend) Saturday afternoon.  We grilled ribs and corn on the cob and had a blast watching the two little people run around.  They are SOOOO funny together!

E and K even helped make a batch of yummy fruit smoothies!

 

Sunday:

Well, our initial goal on Sunday was to be productive.  I guess we kiiiind of were.  It was a stay-at-home and try to get caught up and check projects off the list day, but it turned in to a stay-at-home, nap, lounge around and play with Everett kind of day.  Which is a-ok in my book (and Mike’s, too!).  We did get grocery shopping and a trip to Lowe’s in, but as far as our project check off, we didn’t do too much.  I guess that’s what weeknights are for!

There was a lot of sidewalk chalk, bubbles, baking, finger painting and Sesame Street watching going on as well.  E loves to help in the kitchen and is actually pretty good at it.  He has his own apron, step stool and set of mini-spatulas (that he LOVES to lick) and thinks he truly is my sous chef, which melts my heart. 

We made these pumpkin muffins which were very healthy and toddler friendly; the measurements don’t have to truly be exact and everything can be dumped in the bowl at one time.  We added a few dried cherries and will definitely add nuts next time for crunch!  Overall, we all gave the recipe two thumbs up! 

My tip when cooking/baking with toddlers…make sure you have all of the ingredients prepped and on the counter within easy reach.  once you start, you have to be quick because little hands are grabbing everything!  We did crack the eggs together and he loved it!

Reaping the benefits of baking – the eating!  He loved them (while watching Sesame Street for the first time!).

We did get the top of E’s new-old desk (I used this exact desk, along with many family friends when we were younger) painted with two coats of chalkboard paint.  He loves his “creation station” and I love the placement right in between the kitchen and the couch…the two places that Mike and I frequent!  He feels included, but has his own space to color, play with Legos, and sometimes just turn around and watch a little TV.

This week is back to work for me…sigh.  I am sad to see my summer break come to an end, but am excited for my routine again, fall fun and of course…FOOTBALL SEASON!!!  Here’s our grub, I hope you’re eating something yummy this week, too!
