Menu Monday

Weekend highlights:

We had a fantastic weekend visiting family!  Saturday morning we headed to Palm Coast to visit my Aunt Dawnie and Uncle Clay.  They have a perfect little spot on one of the canals in Palm Coast and it’s like a little slice of heaven.

Their house, inside and out, is adorable and their hospitality was second to none.  We felt right at home.

Because the weather wasn’t cooperating for most of the day (rain) we watched a little football, played with Honey (their sweet doggie) and ate delicious food!

Homemade beer from one of Uncle Clay’s neighbors, Spinach Rice Salad for lunch, Smoked Pulled Pork and Chicken for dinner and homemade vanilla ice cream for dessert.  Stuffed we were.

E had a great time being the center of attention and showing off his eating skills.  He also loved catching up with his cousins Ella and Devan.

EJA - month 6

Once it was pajama time Aunt Dawnie and Uncle Clay got a little more loving and Nana GG even got some kisses.

We headed back to my mom’s house on the St. John’s River Saturday evening and woke up to more clouds on Sunday; but clouds or not, this is still a spectacular view!

We feasted on more good eats: biscuits, sausage, eggs and cheese grits with piping hot coffee.  Delish.

After breakfast and for the rest of the day it was more lounging, napping and playing with Aunt Janie and cousin Justin.

And of courrse, lots of loving from Gransie!

All in all, a great weekend!!!

This week is another busy one with Back to School Night and my mom’s hip replacement surgery.  I know she’s a little nervous, but ready to get the show on the road – since she knows she’ll be chasing a certain someone around soon!

Amidst the craziness, here is our foodie plan for this week:

M:  Chicken Pesto Pizza

T:  Grilled Chicken Sandwiches w/ Chips

W:  Hamburgers w/ Sweet Potato Fries

Th:  Eggs in Purgatory w/ Crusty Bread

F:  Tortilla Soup

Sa:  Palatka

Su:  French Dip Paninis w/ Roasted Carrots

Have a great week!
