New Digs

It's about that time to start talking about one of my favorite topics...decorating!

We are in the process of cleaning out every corner, nook and cranny in our house to get ready for "The Great Swap Out" (I kind of feel like I am living in a real-life episode of Hoarders, Burried Alive at the moment)!  I looooove being creative and creating spaces (especially for the little ones) that are fun, colorful and most importantly functional.

P - Nutty

Although it sounds like a name on Jersey Shore, P-Nutty, my name for peanut butter, is by far my favorite snacking accessory.  Here is a great mid-day-at-your-desk-snack that sticks with you for a while and is much tastier than anything you can get in a vending machine. 



Speaking of sticking with you,  does anybody else feel like they have paralysis of the mouth when they eat P-Nutty?  It's so sticky and ooey gooey.  One of life's simple pleasures. 


P-Nutty and Banana:
  • Banana
  • Peanut butter
  • Pretzels for crunch

PB&J Waffles

Want a quicksy breakfast idea?  Quicksy is my new word for quick + easy...I was going to call it "queasy", but didn't think that sounded too appetizing. 

With a 7 am curtain call at work, I have to find quicksy breakfasts that are simple to assemble, clean up and even simpler to eat before I leave my house at the crack of dawn.  Ugh.  This recipe hits all the right notes:

  • No sticky syrup.
  • Protein packed peanut butter - my favorite.
  • "Stick to Your Ribs" - keeps me full until lunch.
  • Great for kids, too!

We have a winner!


PB&J Waffles

2   Low Fat, Whole Grain Waffles (frozen)
1 1/2 T of Natural Peanut Butter
1 1/2 T of Reduced Sugar Jelly





 Toast waffles until desired doneness.  Spread peanut butter on each waffle.  Top with jelly and spread.  I eat mine open faced, but you could also make into a wafflewich.  Enjoy!
