By the Light of the Moon

 

If you are looking for a fun, inexpensive and nostalgic date night (with or without the kids) boy do I have the place for you:  The Silver Moon Drive-In.

The Silver Moon, in operation since 1948 (you can read about their history here) is located in Lakeland, FL and was about an hour drive from our house – about 45 minutes from downtown Orlando; and well worth the drive.

I had heard great things about this drive-in before and was so excited to try it out.  After visiting their website, which is very informative, and reading a few blog reviews we got the gist of how it worked, packed up the car and headed out.

Check out these authentic car speakers from “back in the day”.  When we arrived they were playing music and worked pretty well.  Not all spots have these speakers, however.  If you arrive early enough to get a spot with speakers you can use those for your in-car sound, if not, tune your car radio to the movie station and you can listen to the sound that way (we actually used both). 

The Silver Moon also has complimentary battery jumping service in case your battery runs down while watching the movie – they have everything covered!

The cost is $4 for adults and $1 for kids ages 4-9 which gets you in for the double feature.

We opted for screen 2 which was playing Bourne Legacy first at 8:30 followed by Ted at 11:00 (we actually could have stayed for another viewing of Bourne Legacy which started at 12:35am, but headed home instead).  I loved that it was a nostalgic feel with current, recent released movies.

The website suggests to arrive early, which we did and we had our pick of spots and had time to explore.  We chose to park in near the back with the speakers since we wanted to back in our SUV, open the back hatch and lay down to watch the movies.

This is allowed as long as you aren’t blocking the view of the other visitors, which we weren’t since we were on the back row.

Although we were novices, there were definitely some seasoned veterans who knew how to set up for a drive-in (see below).

I couldn’t believe how big the screen was – it was gigantic and actually amazingly clear when the movie started.  We were both impressed with the screen quality.

Another thing I loved was the fact that you could bring your own food and drink (although they do have a pretty legit snack bar).  It felt like we were tailgating at the movies.  There were even kids throwing footballs in the big grassy area in front of the cars to pass the time.

I made an easy batch of Pealla for dinner and packed it in our trusty Chinese take out boxes (fyi: you can buy for .25 cents each at Chinese restaurants to have on hand) for easy clean up.

Mike opted for beer to drink as I made Preggo Mimosas to feel festive: OJ and Ginger Ale.  It was actually pretty good!

Although we were planning on laying in our car for the movie, we also brought beach chairs (recommended on the website) which worked well for chillin’ before the festivities started.

The weather was perfect and the bugs were no where to be seen – we couldn’t believe it…although we were equipped with bug spray just in case; we never leave home with out it!

After dinner we started getting our “bed” ready.  We took our outdoor chair cushions, topped with a quilt for the mattress and then stacked pillows for ample viewing angles. 

I can honestly say it was so comfy that I fell asleep during the second movie – which I usually do at home, so it wasn’t a big surprise!

As the sun was setting, more and more cars were piling in at a steady stream.  By the time the movie started there weren’t any spots left near us and we were lucky we had small cars in front of us – score.

There were two short movie promos (not 15 like the regular theater) and then the movie started just as nighttime arrived.

After the first movie finished there was about 10 minutes in between films.  Those cars leaving headed out and a few cars only coming for the second feature piled in. 

Since we were staying for both we opted for dessert:  Apple Crisp!

We had a great night and can’t wait to go back and experience it with our friends – this is definitely a must do.  Put it on your list today!

 

---Disclaimer:  The Ginger Beer featured in yesterday’s post was non-alcoholic.  It’s kind of like a concentrated ginger ale.  I just wanted to clarify…my mom was a little worried!

Menu Monday

 

What a fun weekend we had!

Here is a recap in a nutshell -

 

Friday:

Mike scored free tickets to an Orlando City soccer game (local semi-pro team) that we took in with our friends Lynn and Tuller and then we headed out for a few drinks to finish off the night.

And yes, even pregnant women can still partake while bar hopping (as long as the smoke isn’t too bad):

A ginger beer at our first stop at The Imperial followed by a Sprite at The Red Caboose.

Of course the highlight of our night had to be getting our picture taken with the City cheerleaders (sarcasm).  But the pole climbing at The Red Caboose was a close second!

Saturday:

Date night at the drive in!  I can say about the drive in – AWESOME!  More to come on our adventure tomorrow, but I can tell you that we can’t wait to go back!

Sunday:

We opted for a biking extravaganza while trying out our new bike rack that Lynn gave us.  We headed to the West Orange Trail for a 16 mile ride.  We stopped at the halfway point for lunch in Winter Garden.

The downtown area is adorable and very bike friendly.

We opted for the Winter Garden Pizza Company for a quick refueling break of pizza (me) and a sandwich (Mike) and then headed back trying to dodge the approaching storms – which we did!

Secret Weapon

 

You all know that I am a little bit quirky.  I’m sure Mike would definitely agree.  One of my quirks is that I just don’t like eating salads at home. They just don’t do it for me. 

I love ordering them out at restaurants, some of my favorites come from Greens and Grille, Eden's, Panera and of course – one of everyone’s favorite – Olive Garden, but when I recreate the salads at home they just don’t taste as good.  I don’t know what it is.

Sometimes I think the lettuce doesn’t taste right, but more often than not it is that the dressing is off.  Well, tonight I pulled out my secret weapon.  The “go to” bottle that will turn any salad from ho-hum to yum-yum.

This guy did the trick for me:

The real deal, official Olive Garden Italian Dressing. YUM.

Just the thought of it made me want to eat salad for dinner, and so we did!

Our salad last night included: green leaf lettuce, carrots, bell pepper, tomatoes, cheddar cheese and homemade croutons.

So, with that being said, my tip for the day is that when visiting your favorite restaurants don’t forget to look for take home versions of your favorite items to recreate at home on a budget.

--Most of these below are for my loyal Orlando readers, but check out restaurants near you for take home goodies!

 

Tijuana Flats – they sell all of their hot sauces and you can order large sides of their delicious salsa to take home.

Einstein Bagels – take home your favorite blend of their delicious coffee and a tub of yummy schmear.

4 Rivers – their homemade bbq sauce is not only worth the drive there, but also the standing in line!

Olive Garden – buy bottles of their famous Italian Dressing.  If you go near Christmas, this would be a great stocking stuffer!

Many grocery stores also stock restaurant items on the shelves so you have everything in one spot.  Hooters Wing Sauce and Taco Bell Taco Sauce just to name a few.

Cheese Please!

I don’t know why I haven’t fixed stuffed shells more often – the truth be told, I have only made them once or twice before in my life.  They are so easy and are a quintessential comfort food. 

It got 5 stars from my taste tester – I hope your eaters like it, too.  Enjoy!

Pesto Stuffed Shells

Print this recipe!

yields 4-6 servings

 

1 box Jumbo Shells

1 large jar spaghetti sauce*

For the filling:

  • 1 (15-ounce) container part skim ricotta cheese
  • 1 egg, beaten
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 3 T reduced fat cream cheese (room temp) – my secret ingredient!
  • 1/4 C jarred pesto (or homemade if desired)
  • salt and pepper

 

*I love to add my favorite veggies and seasonings to jarred spaghetti sauce to give it more of a homemade feel – I start by sautéing onion, mushrooms and garlic until tender followed by 1 T of tomato paste for that extra kick.  Totally optional!

 

Prepare HALF OF THE BOX of jumbo shells according to package directions.  Drain and let cool on a baking sheet while preparing the rest of the meal components.

For the filling, in a medium bowl place 1 egg and whisk (this makes it easier to incorporate into the cheese mixture).  Add the rest of the filling ingredients and mix.  Set aside.

Question of the day:  Why does something as delicious as pesto have to look so much like duck poop?

 

Heat spaghetti sauce (and add any “fixings” if desired) in a saucepan on the stove over low heat.

Cooking with Prego while preggo – so fun!

 

Prepare your baking dish by spraying with nonstick spray and ladling a layer of spaghetti sauce on the bottom of the dish.

TIP:  Always, always, always spray your casserole dishes before making savory dishes (not just sweets) – this makes cleanup SO MUCH EASIER!

 

Scoop about 1 1/2 T filling into cooked pasta shells (I used a fork and thought it worked better than a spoon) and place on the bottom of your baking dish.  Continue until all the shells are filled and baking dish is full.  Top with the remaining spaghetti sauce.

Bake uncovered at 350 degrees for 30 minutes.  Let rest for 10 minutes before serving.
