Menu Monday

Happy Monday!  I hope you all had a very "love"ly weekend!

We had lots of exciting things happen:

  • A certain little lady turned 5 months old, stopped using a swaddle to sleep and had her first experience of CIO (cry it out) - the not fun part of parenting.  All in all it was a success, not as bad as I anticipated and we have a well rested unswaddled little lady.

  • I hosted a Stella and Dot Trunk Show at my house for all of my co-workers on Saturday (our guidance counselor at school is a stylist), just in time for Valentine's Day.  I figured this way we could all buy the jewelry that we want and let our husbands off the hook.
We had a blast - I am recapping the whole party tomorrow and including the delicious potato recipe that we feasted on.  So good!

  • Everett got his first big boy bike!  It was technically his birthday present, but we are chalking it up to a Valentine's surprise as well.  We have been teetering back and forth with the balance bike vs. traditional bike for a few months.  I was pro balance bike while Mike was going for the regular bike.  Well, when we found this gently used Huffy bike at Once Upon a Child for $22...we found the winner.  It even came with a horn that Everett is in love with.  Here's to many, many skinned knees!

Although this week is pretty normal, this weekend is filled with lots of events.  The kiddos and I will be heading to the new Whole Foods  in Altamonte Springs for an Orlando Moms Blog sponsored event and then driving to Fort Christmas to meet up with Mike for the 16th Annual Orlando Wetlands Festival (he's on the committee every year).  Both events are free and open to the public!

Until then, here's what we will be noshing on as we gear up for a fun-filled weekend!

M: Pulled Pork Cuban Sandwiches w/ Corn on the Cob
T:  Meatloaf w/ Cauliflower Mash and Roasted Carrots
W:  Healthy Broccoli and Chicken Pasta
Th:  Taco Pie w/ Black Beans
F:  Vegetable Soup - no meat!
Sa:  Steak Salad w/ Apples, Craisins and Walnuts
Su:  Brocoli, Ham and Cheese Baked Potatoes w/ Brown Gravy

Have a great week!
