Menu Monday

What a great weekend we had!  We didn't really do anything spectacular, but had a low-key relaxing weekend that was just what the doctor ordered.



I got hit with a nasty cold at the end of last week and am still trying to get back to 100%, so a Saturday of chilling out, piddling around the house and getting things checked off of our to-do list was right up my ally.

Everett and I started the morning by making Raspberry Blueberry pancakes with fried eggs.  He loves helping in the kitchen and is actually getting quite good.  He loves cracking eggs and was a pro at "bubble watching" when it came to the flipping the pancakes.






After breakfast, since the weather was gorgeous, we headed out for a bike ride.  Now that E likes his helmet, it's much easier to get him excited for bike rides (he went through a phase where he HATED wearing it!).  

We rode from our house to a local playground located on the West Orange Trail in downtown Apopka and then back.  We didn't set the road on fire, but it was definitely a nice workout for this pregnant lady.





Once home, E had a little bit more outside time before his almost 3 HOUR NAP!!!  That never happens on the weekend and was amazing!  I guess we all needed a little catch up day.  




After nap time, we had a "to-do list check off" afternoon of patching holes in the walls, touch up painting, hanging curtain rods, etc. to get ready for the room swap that is happening this weekend.  I am so excited!


Sunday we were invited to go crash Jenny and Jeremy's staycation at the Hilton Bonnet Creek located at Disney.  We jumped at the chance to head to the lazy river and had a blast!





The weather was a bit over-cast (until it was time to leave) but we had a ball floating, splashing and jumping in the water.  Everett loved every minute and I'm surprised he wasn't more of a shriveled raisin.  He was in the water almost the whole day!




We were all pretty exhausted after the pool, but were so happy to have joined our friends for such a fun, relaxing and unexpected Sunday.





This week is my last full week of work before summer (we only have 4 days next week).  So it's all about making it through in one piece.  Our menu is pretty easy as hopefully our week will be too!

Su:  Chopped Salad w/ Balsamic Grilled Chicken
